Can’t imagine life without it. Macaroni without cheese?!! Sin tacos de queso? ….tell me, “No!” It has become such an integral part of the American diet, it would be tough to give it up. Although many, for various reasons, have had to say goodbye to this bovine delicacy, I still feed my desire whenever possible.
Ashe County, North Carolina, is well-known for its beautiful terrain. It is located in the western portion of the state, in the mountains. Among its rolling hills and quaint villages, you can easily spot many a herd of cows enjoying life. Most of these 4-legged friends are dairy “employees”, as Ashe County is home to Ashe County Cheese. Its address is the charming town of West Jefferson.
Ashe County Cheese was founded in 1930 by Kraft, the American curd king. Its creation combined the many efforts of much smaller cheese manufacturers within the area. Through time, it has passed ownership, but continues its focus of making incredible cheddar daisies, Sienna, and Juusto cheese. It has become the largest cheese manufacturer within the state.
On a recent trail up the mountain, I decided to stop and pay this business a visit. How is cheese made? What is the process? I haven’t really ever given it much thought. A trip to Ashe County Cheese will answer all such questions.
Through a wall of glass, one can view the entire process within their factory. It was quite interesting. A video describes not only the development of the product, but also that of the brand. Historical photos supplement the experience, allowing you to realize its importance within the local economy.
Directly across the street is located the Ashe County Cheese Store. After viewing the process, one’s taste buds are dancing in anticipation! The little store does not disappoint, as samples are bountiful. In addition, one can find a multitude of various types of wine, relishes, gift items, and accoutrements—all for purchase. Many of the offered goods are of local make, adding an artisanal character to the mix.
Heading back down the mountain, visions of a pending dinner began to cloud my mind. What would it be? --- I could only think of pizza. What kind?
